Hey! A couple of weeks ago I made soup for dinner. It was a chicken tortellini soup that I learned from Foods class in high school. It is a really easy recipe but it is super delicious. Anyways, I thought I would share the recipe with all of you because it is great for those rainy days or those days when you just need to relax. In high school one of my good friends Jess and I would always go to Kneaders to get soup in a bread bowl whenever we were feeling down. It's just one of those foods that heals the soul.
Chicken Tortellini Soup Recipe:
Ingredients:
1c. Onion - diced
1c Celery - diced
1/2c Carrots - sliced
1 Clove Garlic - minced
11/2c Cheese-filled Tortellini
1tsp Italian Seasoning
1 TBSP Olive Oil
4c Chicken Broth
1c Chicken, cooked & chopped
Directions:
Heat olive oil in a medium sauce pan. Sweat the onions, celery, carrots, garlic, & seasoning in a large pot over medium heat for 10 minutes; lid on. stir occasionally. Stir in broth; bring to a boil. Add tortellini & chicken. Simmer 10 minutes. Season with salt and pepper.
